From the video
The mince gets pink curing salt (Prague powder; the package dose is 1 teaspoon per 5 lb of meat), regular salt to taste, a little smoked paprika, dried garlic, garlic powder, coriander, black pepper, my home spice mix of caraway, coriander, dill seed, bay leaf and pepper, a little sugar and dried cilantro. Pipe it from a bag with a cut corner onto dehydrator trays, dry for 5 to 6 hours on the liner, then remove the liner and dry overnight on the racks.
