Thin Lacy Crepes in a Blender: Russian Blini with Sparkling Water

The quickest way I know to make thin Russian blini: everything goes into a blender. Milk, two eggs, half a teaspoon each of salt and sugar, flour, a little starch for elasticity and about 50 to 75 g of oil right in the batter.

From the video

The trick for lacy crepes is sparkling mineral water at the end. If the batter came out a bit thick, about 150 g of it brings it back to the right consistency, like a thin kissel. Spray the pan lightly, fry each side for a minute or so and flip when the crepe starts to slide. Fill them with farmer's cheese, apples or red caviar.
